THAI SHRIMP AND COCONUT MILK CURRY

This is a Thai dish that will fill your house with an intense frangrance and a satisfying dinner. There were some new spices that I've barely used in the past that the recipe called for. Cumin, Coriander and Cardamom. They all have very intense flavors and you'll find these spices used in Indian food too. These spices are the peppermints of spices and are the things that will create the fragrant smell. I tried tasting them before mixing it into the ingredients to feed the curiosity and I highly discourage that.



...Don't do it!

The main ingredients in this recipe were peeled and deveined shrimp, various vegetables, cilantro and coconut milk. I added a fresh jalepeno to this recipe as well. I was iffy on using a fresh jalepeno in the recipe, but on a recent episode of Rachel Ray, she mentioned that the spicyness of the jalepeno isn't in the green part, but in the seeds. I tried removing the seeds, cut a small piece off the green part and tried it. I expected my mouth to experience a hot sensation, but surprisingly, it was slightly spicy but no fire. I DO encourage you to try to satisfy the curiosity.



Then you put the prepared ingredients in a skillet and cook.

This is best served with Jasmine rice which is a long grain, low moisture rice. My husband and have come to like it and even entertained the idea of eating it with our Korean food, but in respect to our culture, we went back to our brown rice for Korean food. It has a nice frangrance as it cooks and the taste is excellent. If you are wary of intense smells, you may want to open some windows and light some candles as you make the rice and dish, but we found it pleasant.

This dish is great because it's a one dish meal and you really dont need to serve it with anything else. Aftewards, serve fresh fruit or something cold. It's very refreshing!



30 minutes, less than $10 for all the ingredients for 2 and delicious. :)





MINI MEATLOAF

Tonight, We had an old american favorite, meatloaf. Instead of the regular meat loaf, we made them into mini loaves. Personally i like it like this better because you end up getting a little more sauce with each mini loaf. The fact that it's mini doesn't hurt either. :)



Both of these earned a 9 on a scale of 1-10 from my husband. yay!
